Lemon Aspen For Cooking

Lemon Aspen Uses

A sometimes overlooked natural resource is the vibrant flavors of our native plants and their fruits. The Lemon Aspen tree produces a pale lemon colored fruit that has high levels of anti-oxidants and b vitamins.  This zesty fruit is about the size of a large grape, with a star-shaped core similar to an apple.

Lemon Aspen is found in the rain-forests of the east coast of Australia predominantly Queensland, although it can grow as far south as Sydney along the coast in frost-free areas. It grows up to 2.15 m in height with dark green elliptical leaves. Flowering in summer to late autumn then followed by the aromatic and acidic fruit.

Lemon Aspen is a native commodity packs a powerful flavor with a tart citrus taste and a hint of eucalyptus very tangy. Great when the flesh is stewed with sugar and then used in a variety of recipes including sauces, chutney, fish seasoning, marmalade, desserts, refreshing drinks or pastries and  many more.

When using Lemon Aspen at home just remember that 100 g of lemon aspen is equal to the juice zest or pulp of approximately 6 large lemons. So use to taste. The natural world is always amazing and full of surprises, it all boils down to exploration. Trying new things will always lead us on a new journey. – Ange Marxsen
